Mmmm. French toast. Simple, fast, easy, and a go-to choice for weekend breakfasts (when I have time to whip something up, of course.) I was taught the most basic recipe by my dad- beating together eggs and a splash of milk, then dipping slices of bread in the mixture and frying until golden brown. Needless to say, I slathered on a litany of jams, Nutella, and sweetened condensed milk onto my toast- I was, after all, a child on a mission for as much sugar as possible for breakfast. (Luckily enough for my parents, I'm one of those people who simply cannot get high on sugar, no matter how hard I try.)

Looking back, even I have to cringe at the french toast breakfasts I've had, with all that messy sauce- action going on. However, this classic breakfast dish is still one of my favorite at-home morning meals; just not the kind that drowns in a sticky sweet mess. The version that I make these days is mom-approved- quite an accomplishment!- and involves a more refreshing, fruity sweetness. I usually zest a small orange and add it to the traditional egg and milk batter, and throw in some light brown sugar. To top it off, a dash of cinnamon and a pinch of nutmeg gives the toast a slight kick and takes the aroma from amazing to heavenly. For personal preferences, I use whole grain bread, which is best for french toast when it's slightly stale, although fresh works well too. Frying it to a golden brown on both sides in a pan with a dash of olive oil, I serve it with some orange slices, a small blob of sweetened condensed milk, and fresh berries. Voila! no more drowning your golden brown slices in sauce, plus the whole grain bread has more fiber than white slices. Add the fruit, and you might even be able to count this morning treat as healthy! *insert gasping and cheering here*
